January 2022, Virginie Richard is the new manager of the restaurant The Express Chez Ninilocated in the La Guerche business park in Saint-Brevin-les-Pins (Loire Atlantique). “I have been in the restaurant business for over 30 years, as a waitress, says the boss. I started in Paris where I had my experience at Hippopotamus. »
Virginie then worked in various restaurants, in particular that of the African Safari, today wild planet.
“After a few years, I moved to Paimbœuf and I wanted to set up on my own. I created La Mie tartine, a sandwich shop. »
The business was sold some time later.
The restaurateur then bought The molding on the Port of Pornic, an establishment she ran for 6 years, before taking over a working-class restaurant in Blain. “In the middle of covid, it was very complicated. “She finally sold it in August 2021. “I wanted to stop catering and then it caught up with me… But I absolutely wanted to stay in the area, because I live in Saint-Brevin”.
While the former L’Express restaurant offered fast food, the new manager has completely changed the concept.
“We do traditional cooking, homemade as much as possible. We changed the concept of the buffet and transformed it into a salad bar. There is a dish of the day, which varies every day or every other day and there is always a piece of beef on the menu. We also have a menu of three burgers and two slices of bread”.
A team of three people
L’Express Chez Nini is a friendly team of three people since alongside Virginie, there is a chef, David, who has worked for 25 years on theisland of Saint Martin. “He has extensive experience, particularly in very good gourmet restaurants”. Manon, a versatile employee, helps both in the kitchen and in the dining room.
The large dining room is completed by a terrace with around ten seats which can be enlarged if necessary.
